Vegan Tomato Soup with KoyaTofu

Ingredients ( 8 servings)

  • KoyaTofu (Sliced): 99g (2 packs)
  • Onion: 200g
  • Carrot: 60g
  • Mushroom: 40g
  • Celery: 20g
  • Water: 1000ml
  • Canned tomatoes: 600g
  • Bouillon cube (Vegan): 24g
  • Salt and Pepper: as you like

How to cook

  1. Cut the onion, carrot, celery, and mushrooms into 8 mm cubes.
  2. Put the vegetables and water in a pot. Bring to a boil, then simmer over medium heat for 5 minutes.
  3. Add the consommé and stir to dissolve. Add KoyaTofu, let it absorb the liquid, then add the canned tomatoes and simmer over low heat for 5 minutes.
